We source our cattle from premium Wagyu and heritage breeders, carefully studying each pedigree to select for proven marbling, calm temperaments, and strong maternal lines. We know the genetics of each cow.
We also partner with a small network of family farms who raise cattle to our exact protocols — slow-finished, pasture-based, stress-minimized, and fed a ration built from locally sourced ingredients.
